A significant part of the UK food industry is moving from artificial colors towards natural alternatives. However, natural colorants are less stable and more expensive. The lack of stability can become a problem if natural colorants are added to foods with a long shelf life. Standard long-term tests are time-consuming. To identify accelerated tests for predicting the stability of natural colorants (anthocyanin, lycopene, chlorophyll, and Cu-chlorophyllin), the individual colorants were investigated in three different food models (hard candies, gelatin candies, fruit-based drinks).
